Pepes Patin Tempoyak
Materials
a. 1 kg of catfish
ground spices :
a. 5 cloves red BWG
b. 3 cloves white BWG
c. 3 red chilies kriting
d. 1 cm turmeric
e. 1 cm ginger
f. 3 pieces of hazelnut
complementary:
a. 2 tbsp tempoyak
b. 2 stalks lemongrass
c. 2 bay leaves
d. 2 cm galangal
e. 2 tomatoes uk.besar
f. basil leaves to taste
g. banana leaves to taste
h. salt to taste
i. 1/2 tablespoons sugar
j. 1 packet Royco
How To Make:
1. clean the fish and cut according to taste, put in a bowl besar.haluskan bumbu.sereh and thinly sliced galangal. then mix the fish with all the spices, give sugar, Royco, and tempoyak and stir well. let stand for a few minutes so the flavors mingle. taste test!!
2. fish wrap with banana leaves, the contents of the 2 piece fish and prepare the double pan (you can also use steamer). cook it for at least 20 minutes with the small fire, if it smells like the smell of charred already sangit. make sure the fire .
